If I could, I'd eat nothing but cheese. Here are a few of my favorite.

But is the Manchego cheese made of sheep or goat's milk or a combination of both? It's *very* important. My wife's family is from La Mancha, and having eaten more Manchego cheese than you could possibly imagine, I have to say it's a vital distinction. It took me over a year to figure out why sometimes it tasted great (sheep) and sometimes putrid (goat) and sometimes only tolerable (combo) :-)
